Pioneer Woman’s BBQ Jalapeño Poppers

This recipe is from The Pioneer Woman and they are easy to make and yummy!


18 Fresh Jalapeños

8 oz of cream cheese

1/2 cup grated cheddar cheese

1 green onion

18 slices bacon, cut into halves (I use Applewood)

BBQ sauce (I use Jack Daniels)


Rubber/plastic gloves for working with the jalapeños – WEAR THE GLOVES…trust me!


Preheat the oven to 275°

Cut the jalapeños in half lengthwise

Remove the seeds and membranes with a spoon, for more heat….leave some seeds in

In a bowl combine the cream cheese, cheddar cheese, and chopped green onion. Mix gently.

Stuff each half with the cream cheese mixture

Wrap the bacon slices around each half, be careful not to stretch the bacon and wrap too tightly (it contracts when it cooks)

Brush the surface of the bacon with your favorite  barbecue sauce (you can use chutney or apricot jelly instead, if you like)

Secure the jalapeños with toothpicks.

I like to use a pan with a rack onto so that they get crispy all around.

Bake them for 1 hour or until the bacon is sizzling
