I had a couple of sweet potatoes lying around and had been watching Top Chef, so I was inspired to make some Sweet Potato Gnocchi. This is a variation on the recipe I found on allrecipes.com.
Sweet Potato Gnocchi
2 (8 oz) sweet potatoes
1 clove garlic
1/2 teaspoon salt
1/2 teaspoon dried nutmeg
1 3/4 cup flour
1. Poke the sweet potatoes and cook in the microwave until soft (about 10 minutes). You can also bake the potatoes in a 350 degree oven for about 30 minutes.
2. Once the potatoes are cool enought to work with, scrape out the insides, put them in a bowl and mash them up. If you are using a stand mixer, put the potatoes into the mixer and mix until they are mushed up.
3. Add garlic, salt, nutmeg and egg and mix up until incorporated. Mix in the flour a little at a time, until you have a soft dough. It is the perfect consistency when the dough sticks to itself more than it sticks to your hands. Use more or less flour as needed but note too much or too little flour will change the gnocchi’s texture.
4. Bring a pot of salted water to a boil. While the water is boiling, make the gnocchi. On a floured surface, roll out the dough in snake-like formations and cut them in 1 inch sections.
Drop the sections into the boiling water and allow them to cook until the float to the surface. Remove the gnocchi with a slotted spoon. Serve warm with butter or a cream-style sauce, such as Alfredo.
