I made these for the first time this morning…and everyone loved them…definitely a keeper!
1-1/2 cups flour
1 cup oatmeal, (I throw this in the food processor until finely ground…but your choice)
1 tbsp baking powder
1-1/2 tsp ground cinnamon
1/4 tsp salt
1-1/2 cups milk
6 tbsp oil, I use olive oil
1 tsp vanilla
2 tbsp brown sugar
In a medium to large bowl beat the eggs with a whisk.
Add the milk, olive oil, vanilla & brown sugar and whisk to combine.
Add the flour, oatmeal, baking powder, cinnamon & salt and whisk until blended, the batter should be uniformly moistened but will be slightly lumpy.
Bake according to the directions for your waffle iron. (I use a Belgian Waffle Maker because my regular one stopped working…either is fine)
We like it topped with powdered sugar and real maple syrup or sometimes fresh fruit.
If you have any leftover batter, continue to make waffles until the batter is gone.
Cool extra waffles on a cooling rack and then freeze for breakfast later in the week.
Heat them in a toaster oven or toaster.
If I leave the batter in the fridge for later use it gets forgotten, but the boys never miss the waffles in the freezer!
