The first time I had this was at Sliders Seaside Grill in Amelia Island with my mom & sister…
a yummy side dish and a perfect low-carb stand-in for mashed potatoes
8 cups (about 1 head) cauliflower florets, cut into bit-size pieces
4 cloves garlic, crushed and peeled
1/3 cup milk
4 tsp olive oil, divided (you can use butter if you prefer)
1 tsp butter
1/2 tsp salt
Freshly ground pepper to taste
Optional: Chopped fresh chives
Optional: Shredded Cheese
Steam cauliflower florets and garlic until very tender. (If you don’t have a steamer, place florets & garlic in a microwave-safe bowl with 1/4 cup water, cover and microwave on High for 3 to 5 minutes.)
Place the cooked cauliflower and garlic in a food processor.
Add milk, 2 teaspoons oil (or butter), 1 tsp butter, salt & pepper; pulse several times, then process until smooth and creamy.
Transfer to a serving bowl and drizzle with the remaining 2 teaspoons oil (or melted butter) & top with shredded cheese and chives, if desired.
