Stuffed Zucchini

This is a self-created dish when looking for a way to use some of the veggies that I bought at the market.  This serves approx. 4 depending upon the size of the zucchini.

1 lb. Italian Sausage or Chicken Italian Sausage (remove from casing if links)

1 Green Pepper

1 Red Pepper

1 Med. Onion

2 Zucchini (cut in half with ends removed)

1 jar of pizza sauce (I like Wegmans chunky pizza sauce, you could use spaghetti sauce but I think the pizza sauce is a little thicker)

Mozarella Cheese (optional)

Parmesan Cheese (optional)

Preheat oven to 350 deg.

In a large pan Saute peppers and onions until cooked (approx 7 min).  Add sausage until cooked (approx. 5 min).  Add pizza sauce to pan and mix together.

To prep zucchini cut length wise in half.  Scoop the center portion of the zucchini out you can add this to the pepper and onion mixture, or discard.

Place pepper, onion, and sausage mixture in the center of the zucchini.  Place zucchini on a baking sheet and bake for approx. 20 min. or until zucchini is tender.  Add cheese if desired approx 5 min before removing from oven.
