Weight Watchers Pumpkin Spice Cake

Dense, moist and delicious!


  • 1 box Spice Cake mix
  • 1 3/4 cups canned pumpkin
  • 2 egg whites
  • 1/2 cup water
  • Cool whip or Whipped Cream


  1. Add all ingredients, except Cool Whip in large bowl.
  2. Mix well at medium speed for 2 minutes. (mixture will be very thick)
  3. Pour mixture into sprayed (spray with PAM) 9×13 pan or bundt pan.
  4. Bake as per box directions.
  5. Top with Cool Whip

You can also make a Cream Cheese Frosting – add 1 pt per serving


  • 1 8oz tub Cool Whip
  • 8oz pkg cream cheese
  • 1/2 cup splenda or sugar
  • 1 tsp. vanilla


  1. Blend Cream Cheese, Splenda & vanilla.
  2. Fold in Cool-whip
  3. Top cake with frosting.
