Easy Sausage Casserole

This is a delicious, easy meal to make!

Everyone loved it…definitely a keeper.


1 Package Colman’s Sausage Casserole Mix (I found it in the International Section in Wegman’s, it’s from the UK)

&ou can follow the directions on the back of the package but I tweaked it a bit.

1/2 pint cold water

1- 1/2 lbs Sausage (I used 6 links of Poultry Sausage with Feta & Spinach)

1-2 red onion, peeled, quartered and then sliced thinly (I used one large red one)

2-3 peppers, sliced (red, orange, yellow or green…add some color)

Optional: 4 oz mushrooms (not an option in my kitchen)


Preheat oven to 350ยบ.

Brown the sausages in a large pan or on the grill if you prefer. (This is not to actually cook the sausages, but just to give them some color…it’s more appealing)

Slice sausages into bite-size pieces.

Place sausages & sliced vegetables in a casserole dish.

Mix the contents of the Sausage Casserole Package with 1/2 pint of cold water.

Pour into the casserole dish & mix well.

Cover and bake for 1 hour, stirring once after 30 minutes.

I served this is Red Rice.
