Split Second Cookies

Great shortbread like cookie…use different jams to change the flavor!


  • 3/4 cup butter, softened
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • about 1/3 cup jam (your choice)


  1. In a large mixing bowl, cream butter and sugar until light and fluffy.
  2. Beat in egg and vanilla.
  3. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well
  4. Divide dough into four equal portions; shape each into a 12-in. x 3/4-in. log.
  5. Place 4 in. apart on two greased baking sheets.
  6. Make a 1/2-in. depression down center of logs; fill with jam
  7. Bake at 350 degrees F for 15-20 minutes or until lightly browned.
  8. Cool for 2 minutes; cut diagonally into 3/4-in. slices.
  9. Remove to wire racks to cool completely.
